Pan Seared Halibut

Pan Seared Halibut with Greens

A light and lovely protein and veg meal, perfect for breakfast, lunch or dinner
Ingredients
  • 1 tablespoon coconut oil
  • 2 8-oz halibut fillets
  • 1 bunch collard greens
  • 1 recipe Walnut, Orange and Mint Relish
Instructions
  1. Preheat oven to 425.
  2. Heat oil in cast iron skillet over high.
  3. Pat fish dry with paper towels.
  4. Place in skillet and cook for 90 seconds, flip with spatula, then place in oven to cook for 10 minutes, or until internal temp reaches 140.
  5. While fish is in oven, wash and chop collards, then place in steamer basket over pot with two inches of boiling water.
  6. Steam for two minutes.
  7. Remove fish from oven, cover with foil and let sit for three to five minutes. Place one piece of fish on top of half the greens, and top with relish.
Walnut, Orange & Mint Relish

This light relish is the perfect addition to a light meal to add flavor and zing. Try it on top of grilled white fish.
Ingredients
  • 2 tablespoons toasted walnuts
  • 1 tablespoon orange zest
  • 1/4 cup fresh mint leaves, plus two leaves reserved for garnish
  • 1 clove raw garlic
  • 1 tablespoon olive oil
  • cayenne pepper, optional
Instructions
  1. Combine all ingredients in mini-prep food processor and pulse until well combined. Place in small bowl with reserved mint leaves as garnish and serve with fresh fish or poultry.
